It's mid August, which means it's back to school time for millions of kids across the country. Our troops haven't hit the books just yet, but that hasn't stopped us from cooking up a bunch of new recipes for lunch boxes and fast family dinners.
Sweetie Pie Quesadillas: Packed in a lunch box warm or at room temp, these "I'll never trade them" quesadillas are filled with shredded sweet potato, black beans, salsa, and cheese.
Waffle Iron Grilled Cheese: When we say this sandwich is adorable, we mean it! The secret ingredient is thinly sliced Granny Smith apples. Try it ... you'll like it!
Cherry Chocolate Oatmeal Cookies: When the kids get home from school, serve up our better-for-you cookies with a tall glass of milk.
Corn and Spinach Fritters: This easy weeknight meal is a great way to celebrate seasonal produce and farm fresh flavors.

Janice headed north to her parents' cottage in New Hampshire for some R & R. There's nothing like kayaking on a lake to de-stress! She also drove with Don and Leah to Washington, DC to pick up Carolyn who had just completed a summer internship. One of the highlights of the trip (besides revisiting the Julia Child exhibit) was dinner at Founding Farmers, a sustainable restaurant owned by American family farmers.
