Happy spring everyone. Spring is a time for fresh starts, gorgeous green vegetables, and a new commitment to feeding your family right, and at Meal Makeover Moms, we're here to help you do just that with healthy new recipes your family will love.
Here's what we've been cooking up this month:
Veggie Quiche Patties: Made in muffin tins and filled with sauteed Swiss chard (or spinach), eggs, and Cheddar cheese, these adorable patties are great for lunch, dinner, or as a snack.
Think green with our recipes for Sweet Pea Soup and Light & Lemony Tuna Noodle Casserole. Our updated casserole is not the one you grew up eating!
And think red with our oh-so-cute Chicken Salad Tomato Bites and Chef Mary Ann Esposito’s Rustic Tomato and Cheese Pie. Both recipes were created for Backyard Farms; they grow tomatoes year round in a giant greenhouse in Maine, so their tomatoes taste like summer every season of the year!
We have two Cooking with the Moms radio podcast episodes this month that we hope you'll tune into. The first features National Nutrition Month with an emphasis on eating green and the other show serves up tomato tips and tomato recipes. You won't want to miss either episode.
