Our kitchens have been buzzing with activity over the past few weeks, especially Janice's kitchen, which is finally done. She christened it recently during a surprise party for her Mom's 80th birthday. It was a lovely and special event!
Here's what we've been cooking up for you and your families:
Black Bean Enchiladas with Pumpkin Sauce: A bean and spinach-filled vegetarian enchilada with a "secret" sauce featuring canned, pureed pumpkin. A crowd pleaser for sure.
Apple Crisp Snack Parfaits: Cooked, cinnamon-dusted apples get layered with naturally-sweet grapes, low-fat vanilla yogurt, and all-natural granola for the perfect after-school snack.
Egg & Ham Salad Cups: Hard-cooked eggs get mixed together with bits of spiral cut ham and diced red bell peppers ... and the salad is served in adorable lettuce cups.
Herby-licious Freekeh Salad: If you have never eaten freekeh, an ancient grain from the Middle East, be sure to give it a try. This salad is made with cucumber, tomatoes, olives, pine nuts, dill, and mint ... and yes, kids love it.
Apple Walnut Pancakes: Start the day with our whole grain pancakes made with oats, whole wheat flour, apples, and walnuts. Great nutrition has never tasted so good!
