Saigon Cinnamon!! I've been playing with the Spicy Nectar Fudge recipe a little bit lately - tweaking it just so here and there to bring out that cinnamon just a touch more. And what’s not to love about this ancient coveted spice? It comes with a long list of healing benefits and brings a fantastic spicy, earthy, nurturing flavor to food. Health-wise, cinnamon has traditionally been used as a natural remedy for eliminating headaches, migraine relief and as a blood sugar stabilizer. It is said to help lower bad cholesterol, increase insulin production, have antifungal properties, reduce the proliferation of cancer cells, have an anti-clotting effect on the blood, and, (get this) honey and cinnamon combined has been found to relieve arthritis pain! Who knew? but we’ll take it. Saigon cinnamon in particular, has a 5% oil content, giving it a spicier “red hot” flavor compared to the rounded out, earthy profile of Ceylon cinnamon, and that’s why we chose it. Well balanced and nostalgic with a kick, this spice is hands down a Honey Mama’s favorite.
