Hi! This is Andrea from Cooking with a Wallflower. It’s a brand new month and I’m ready to share with you a perfectly cozy recipe. The kind that you’ll want on cool spring days. And filled with ingredients you probably already have in the fridge.

My sisters and I are huge fans of chili. It’s super easy to make and you can easily customize the ingredients of the chili to add only what you like. We personally like our chili filled with vegetables and mushrooms. But you can easily add ground meat and beans for a hearty bowl of comfort.

I love that chili is so comforting. It has that spicy and smoky flavor from the chipotle chili. The mushrooms give the chili texture. The corn gives the chili a hint of sweetness. And the zucchini gives it a little bit of a crunch. Every bite is so delicious. Every pot is simple to make and perfect for a weeknight meal.

Hi! This is Andrea from Cooking with a Wallflower, and I’m back this month on Ask Anna to share with you another brand new recipe perfect for weeknight dinners.

Weeknight dinners are always at the front of my mind. Mostly because at the end of a long day at work, I’m reluctant to spend over an hour prepping and cooking my dinner. But in general, if there’s a dish that I always fall back on, it’s pasta. There are so many different types of pasta that you can use with various sauces to choose from. And of course, you can make the dish your own by adding extra ingredients.

Today, I want to share with you, creamy truffle pasta. Pasta noodles cooked in a creamy and buttery cheese sauce, lightly seasoned with truffle salt, and tossed with slices of truffle mushrooms.

If you’re a fan of mushrooms, then this creamy truffle pasta dish is definitely for you. It takes just about 20 minutes to prep, cook, and serve.

I feel as if this year has gone by pretty quickly. Maybe it’s because there has been so much going on lately. With weekends filled with events and things to do, every week seems to pass by before I even know it. How has this year been treating you?

Let’s talk about this Irish Mule.

Since St Patrick’s Day is just days away, I thought I would share with you this Irish Mule. I’m obsessed with the classic Moscow Mule. Mostly because it’s an easy cocktail to make and it’s super refreshing. You can add your favorite hard liquor, mix in lemon or lime juice, and top with ginger beer. That way you can customize this cocktail however you like.

This has become one of my favorite cocktails to mix for when we have friends over for dinner and want to entertain. Most of the ingredients are things that we have in the fridge and in the pantry. So we’ll always be able to make this drink when we want to.
