Christmas Edwardian Style

How did Julia Foster, the Governess of Highland Hall, celebrate Christmas? The family set up their Christmas tree on Christmas Eve and decorated it with paper chains, glass ornaments, toys, sweets, and candles. They attended church on Christmas morning and then enjoyed a special dinner. They started by pulling open festive "crackers" and wearing paper hats. Their dinner included roast goose and ended with a flaming plum pudding, which had a few coins hidden in it for good luck. After dinner they sang carols around the piano and played games. It sounds like a wonderful day!

Festive Raspberry Torte

This cool and light dessert is the perfect treat to make and serve with your Christmas dinner. Enjoy!
Crust:
I 1/2 cups graham cracker crumbs
1/2 chopped pecans or walnuts
1/4 cup sugar
6 Tbs. melted butter
Mix together and press into and up the sides of a springform pan and then chill.

Filling:
1 12 oz. package frozen whole raspberries
1 cup sugar
2 egg whites
1 Tbs. frozen orange juice concentrate
1 tsp. vanilla
1/8 tsp. salt
1 cup whipping cream (or use light cool whip)

Using a food processor, finely chop the frozen raspberries into a fine powder. Use a whisk attachment on the food processor or use an electric mixer for the next step. Add the rest of the ingredients except the whipping cream. Beat until stiff peaks form, about 3 - 5 minutes. Whip the cream (or add cool whip) and fold into the raspberry mixture. Freeze until firm. When ready to serve, place on a platter and allow to sit for 5 minutes. Enjoy!
