Keeping Active - Have You Tried This?

Fancy doing something different on your next walk? Have you heard of Geo Caching?

Geocaching is described as a high-tech treasure hunt. The objective is to find a geocache, a waterproof container with a log book and perhaps some small items to exchange. The geocache creator hides the container in the outdoors, then posts details on a geocaching website.
To play, you use a geocaching website to select a cache you'd like to find. The website will list a description, some map coordinates and possibly cryptic instructions for locating the container.

I couldn't wait to try this out for lunch thanks to Fitnesslife.co.nz.

Chicken Lettuce Wraps

2 large iceberg lettuce leaves
1 cooked skinless chicken breast, cut into thin strips
3 Tbsp cooked brown rice
1/2 red or green pepper, cut into thin strips
1 carrot, peeled and cut into thin strips
You can use other types of lettuce such as Cos or butterleaf

Sauce ingredients:
2 tsp peanut butter
2 tsp hot water
1 tsp soy sauce
Method:
1. In a small bowl, mix together the ingredients fot the sauce and set aside
2. Lay out the lettuce leaves on a work surface and divide the chicken, rice, pepper and carrot between them. Drizzle over the peanut sauce, roll up the lettuce leaves and voila!
