Hello Friends!

Wow, there are only 3 days left in the month, where did it go? Ok, so it's a short month to begin with, but it's feeling even more so this year. Perhaps the quick vacation we took to Lake Tahoe has something to do with it. I never thought I would have the opportunity to ride out west, but we got lucky and it did happen this year. There is a huge, beautiful country out there, something that is easy to forget. My bucket list just got a whole lot longer and my story is bound to get more interesting!

Speaking of stories, we've all got one, if you want to read a little more about mine, check out my blog. Part of my re-write includes constantly learning and putting myself out there. I've shared my before and now pics, I've shared my insecurities and how I'm working to overcome them, but that doesn't mean I don't still have struggles and battles with my "old" self daily. For example - portion control. I love to cook and I love to eat. When something is tasty, well, I have a hard time finding the off switch. Can you relate?

I did not grow up learning the portion control concept; quite the contrary, I wasn't allowed to leave the table until my plate was clean. Granted, I filled the plate with eyes bigger than my stomach, and being wasteful was frowned upon so I used to smush mashed potatoes in the garbage disposal so my parents would think I cleaned my plate. Of course, I was always found out, but at least I got away with not eating those taters!

I'm so excited there are now tools to help me with portion control, one of which is the 21 Day Fix. It's a meal and exercise plan designed to help visualize proper portions using color coded containers. I didn't want to mention this product until I had the chance to check it out for myself, and I'm impressed. Now, the containers seem REALLY, REALLY small... but once I started using them, I realized that I wasn't eating enough protein. It's interesting the things you learn when focusing on properly fueling your body rather than calorie intake. When filling the containers and transferring the meals to a plate, it put a lot of things in perspective. Salad In A Jar

You may have seen this posted on facebook a few hundred times, but do you know anyone who actually tried it? If not, you do now! So easy, and pretty to boot! I also found, it lends itself well to the 21 Day Fix!

The layers from Bottom to Top are as follows:
1 orange container of dressing
1 yellow container of brown lentils or edamame
1 red container of baked chicken
1 green container of chopped carrots, red peppers & cucumbers
1 green container of raw kale

Keeps in the fridge for a week. When ready to eat, shake well then pour on a plate to serve. Stays fresh because the dressing never touches the greens.

Here is the inspiration: Not only does SALAD IN A JAR save space in your fridge, it also reduces food waste and gets non-salad eaters to mow down daily. THE ARRANGEMENT From BOTTOM to TOP: Dressing Shredded carrots Cherry tomatoes Sunflower seeds Hard boiled eggs Baby spinach DIRECTIONS 1) Arrange ingredients in a large mason jar 2) Store in fridge for up to a week 3) When ready to eat: shake jar, place on a plate, and eat! You can make any arrangement you want… you can add red onion, cucumbers, radishes or peppers. Always remember to put the dressing at the bottom and the lettuce at the top—a MUST. As long as the dressing does not touch the greens this will stay fresh in the fridge for up to a week.
