A Little Christmas Dreaming

It's a beautiful Spring day here on our Queensland farm and I'm busy experimenting with recipes and decorations, finding ways to make a Summer Christmas feel like Christmas to this Canadian girl. I've been so inspired as I take beloved Christmas ingredients - cranberries, chocolate, spices - and turn them into healthy and delicious hot weather foods that suit my sunny home.

I love this Dark Chocolate Cranberry Chia Pudding, lusciously creamy and full of good things like raw cacao, chia seeds, fresh cranberries, real maple syrup and coconut milk.

This week I've been making delicious homemade spirits to bring cheer to our Christmas celebration. Pear Liqueur spiced with Star Anise, Rich Coffee Liqueur laced with Raw Cacao, and gorgeous Pomegranate Liqueur.

They are so easy to make. Simply fill a jar with the fresh fruit of your choice - pears, cherries, pomegranates, plums, etc - then fill to the brim with vodka. (Make sure the fruit is covered by the vodka or it will turn moldy.) Cork or seal then set in the back of a dark cupboard until Christmas. When you're ready to toast the season with your loves, simply strain and serve very cold. You can also whip the liqueur into cream for a light syllabub, and the coffee liqueur is divine stirred into your morning cuppa or a hot chocolate.
