Hi! It's been almost a month since I wrote, and in that time I've had surgery and am recovering nicely. Thank you all for your thoughts, prayers, and emails. Each one gave me strength and comfort.

I still have a way to go until I'm back to 100%, so for the next few months I will be popping in and out with new recipes as often as I can. I will still be adding member-contributed recipes to fatfreevegan.com, so please feel free to send me any of your own creations you would like to share.

Fans of Loki will be happy to hear that there is a photo of him in the current blog post and that I'm planning a post with photos of Loki and some of his animal friends. Look for that to appear on my blog in the next few days.

Made with oats and oat flour, these Apple Pie Oatmeal cookies are very lightly sweetened with dates and raisins. I blended a whole apple, skin and all, into apple sauce and added pumpkin pie spice, for a cookie that tastes like a healthy apple pie. Get the recipe here.

On the main Fatfree Vegan site, Tom shared his delicious cauliflower-based Cheezy Sauce.

A couple of the members of the Fatfree Vegan family are going through big life changes: Maria will be moving from the house she's lived in for the last 20 years, and frequent contributor Alina moved from Alabama to the beautiful Seattle area. We wish them both happiness in their new locations.
