Only in the last 70 years have we foolishly tried to take out the "bad" parts of a food and eat the "good" bits. We have fallen flat on our face. The attempt to take out fat and replace it with carbohydrates is largely responsible for the obesity epidemic we have seen in the US since the 80s. Brown University Researchers have discovered that eating dairy does not increase the risk of heart attacks. While saturated fats still need to be eaten moderately, there are other "unknown" things in dairy that nullify the effect of the saturated fats. There is also emerging data that butter is not bad for us as we had thought.

I love Thanksgiving but not turkey. It is often too bland and dry for my taste. Turkey made with this recipe is moist and I put a mixture of yoghurt, ginger, garlic, salt and red pepper flakes underneath the skin before steaming to address the blandness issue. Try it and let us know how it turned out.
