Lemon Cakes with Blueberry Compote
|
May 2012
This month in The Meal Makeover Moms' Kitchen, it's been all about berries, beans, and one of our favorite veggies ... beets! Read on for our newest recipes, our latest culinary adventures, and an awesome Sur la Table giveaway for a bamboo salad bowl set.
▪ Nutrient-rich blueberries made their way into three delicious recipes: a Blueberry Banana Oat Bread -- perfect for a snack, breakfast, and even dessert -- luscious Lemon Cakes with Blueberry Compote from the adorable new cookbook, Muffin Tin Chef, and a refreshing Blueberry Peanut Butter Smoothie that we featured on Mother's Day. ▪ In preparation for the arrival of farm-fresh beets from our CSAs, we tossed together a Roasted Beet Salad with a heart-healthy canola oil/citrus vinaigrette. Roasted beets are surprisingly kid friendly, so we hope you'll give this recipe a try! ▪ The Holland House Meal Makeover Sweepstakes is in full swing, and we just chose our first of three winners. Winner #1 is Lolli, a mom of five from the DC area. She sent us her family's favorite Chicken Cordon Bleu recipe, and we gave it a super delicious, super-nutritious "fix." You are going to LOVE our new-and-improved Cheesy Chicken Cordon Blue! Visit our blog to read all about it, and visit the Holland House Facebook fan page to enter to win your very own meal makeover. ▪ Late last month, Janice traveled to Austin, Texas for a conference dedicated to beans. She came home determined to cook up a batch of dry beans from scratch. You can enjoy the fruits of her labor with two new recipes: Cheesy Bean Pie and Pinto Bean Stuffed Quesadillas.

Bamboo Salad Bowl |
From picnics and family reunions to creative food truck fare, it's that time of year again when summer salads make their way onto tables, blankets, and park benches. To celebrate the best of salad season, our friends at CanolaInfo are sponsoring this month's giveaway for a Sur la Table bamboo salad bowl, a set of bamboo servers, and a cool salad dressing shaker. Retail value is $90.00!
There are THREE ways to enter the giveaway: (1) Forward this newsletter to a friend (the Forward to a Friend button can be found at the bottom of the newsletter), (2) Visit Meal Makeover Moms' Kitchen and leave a comment about your favorite salad or salad dressing recipe, and/or (3) Leave a comment on our Facebook page answering the same question. The more you do, the more times your name will be entered. We will pick our winner on June 15th using Random.org. U.S. only please. |
We met author Michael Natkin at his book launch party here in Boston, and wow, his food rocks! We love this cookbook. It's beyond beautiful and the recipes really whet our appetites. Chickpea Fritters, Shitake Tacos with Asian pear Slaw, and Carmel-Cooked Tofu are just a few recipes that top our must-make list.
I scream, you scream, we all scream for frozen Greek yogurt bars! This is a new line of frozen dessert bars you can feel really, really good about serving to your family. They come in three refreshing flavors: Blueberry, Raspberry, and Strawberry. Each bar has 70 calories, 6 grams of protein, and 15% calcium.
Nibbling on nuts for a between-meal snack can bring a boatload of great nutrition to the diet. And Planters hits the healthy jackpot with their lineup of mixed nuts. We like their Omega-3 mix featuring walnuts, cranberries, and dark-covered soy nuts and their Bone Health mix. |
Roasted Beet Salad with Canola Citrus Vinaigrette |
Beets are rich in color as well as health-enhancing antioxidants. When you roast them, their natural sweetness shines through, so don't hesitate to introduce them to your family (if you haven't already). This Roasted Beet Salad gets tossed with a light and refreshing canola oil/citrus vinaigrette, and we think it's the perfect recipe for summer. |
