In its comprehensive and very interesting "State of the Specialty Food Industry 2014" report, the Specialty Food Association (SFA) notes that 2013 sales of specialty foods at retail exceeded $88 billion, up nearly 16% from 2012. Question: How does SFA define "specialty food?" Here's their answer [ABSTRACT]: _"Specialty foods are of the highest quality. Their specialty nature derives from ... their uniqueness, exotic origin, particular processing, design, limited supply, unusual application or use, extraordinary packaging or channel of distribution, the common denominator of which is their high quality." Debate about what is 'specialty' and 'gourmet' has been ongoing for a thousand years. Far too many products are called 'specialty' while being decidedly ordinary, and not in the least unique, exotic, unusual, in limited supply, or of the highest quality. So what? The $88 billion is not the point. The magnitudes and trends are! Especially Non-GMO, refrigerated and natural foods. Can you think of any examples of products (eggs?) that are not really specialty? Let us know here.
